Clear Creek Distillery was founded in 1985 with a vision to use the bountiful fruits of the Pacific Northwest to create fruit-based spirits that rivaled the best of their European counterparts. Using old-world techniques and sourcing ingredients from the local orchards and fresh water springs of Mount Hood in the Oregon countryside, Clear Creek became one of the first craft distilleries in the United States. 

McCarthy’s Oregon Single Malt Whiskey is of the Islay tradition of Scotch whisky. Made from 100% peat-malted barley imported from Scotland and distilled in Holstein pot still using one   pass distillation, this premium, non-chill filtered product is then barrel-aged in air dried Oregon oak barrels. The present bottling is aged 3 years (minimum) and the result is remarkably smooth for a 3 year old whiskey.

Clear Creek’s Reserve Apple Brandy, Aged 8 years, is a worthy competitor to the best Calvados, the regional French apple brandy. Clear Creek crushes and ferments whole Golden Delicious apples from Washington State’s Yakima Valley, and distill the whole fruit mash. Following the customs of the Calvados makers of Normandy, the apple spirit is aged in a combination of old and new French Limousin oak barrels for a minimum of eight years.​

Aged for a minimum of 2 years in French Limousin oak, Clear Creek’s Apple Brandy is complex enough to be enjoyed neat in a snifter, but also wonderful in any cocktail calling for brandy, applejack or Calvados.

Inspired by the obscure Alsatian spirit Eau de Vie de Bourgeons de Sapin made from pine buds, our Douglas Fir Brandy is truly a tree in a bottle. It took Clear Creek Distillery ten years of experimentation to successfully capture the true essence of Oregon’s state tree.​

Fresh Oregon and Washington sweet cherries are crushed, fermented, and distilled into clear, powerful Kirschwasser (Cherry Schnapps) in the traditional German fashion.The subtle cherry flavors and intriguing vanilla and almond aromas come only from the cherries and their pits (“stones”), as does the alcohol.

Clear Creek’s Cherry Liqueur is made from dark, sweet table cherries from the cherry orchards surrounding The Dalles, Oregon, in the Columbia River Gorge. The sweet meat of the ripe cherries gives the Cherry Liqueur its rich vanilla notes of a mouthful of cherries. A perfect addition to classic cocktails, especially the Singapore Sling.​

Clear Creek’s Pear Brandy is made in the tradition of France’s classic Eau de Vie de Poire Williams. Bartlett pears grown just an hour away from the distillery in the Hood River Valley are crushed at their absolute peak of ripeness. The whole fruit mash is carefully fermented, and the spirit is distilled in traditional German-made pot stills.​

Clear Creek’s Raspberry Liqueur manages to follow up the intense nose with a lovely, strong, fresh red raspberry flavor that you'd expect from the aroma. 

Like other Clear Creek liqueurs, it is made with their own distilled clear fruit brandy and perfectly ripe fruit, and the result is a beautiful, lightly sweet, distinctly raspberry liqueur.

Made with Clear Creek’s Pear Brandy as its base spirit, Pear Liqueur is a true pear explosion. It’s lovely as an alternative to a dessert wine, and is delicious paired with sharp cheeses as a pre-dinner treat. The taste is surprising complex, smooth, slightly floral, with a little bit of acidity, and a pear finish that lingers long after you set down the glass. Used in sparkling wine, it makes a decadent “Kir”.  At Clear Creek, it’s called the “Kir Blonde”.​

Oregon Black currants are added to clear fruit brandy and the result is truly wonderful: a tart, lightly sweet, slightly earthy liqueur with huge fruit flavor. Lovely in the classic Kir and Kir Royale or sipped on its own.
